Easy Vegan Italian Meal


When we got back from San Francisco last Sunday we were so ready for a home cooked meal.  We threw together some market veggies that we had in the fridge (Yellow, Red, and Orange bell peppers, onion, mushroom, and tomatoes) and made a mock meat sauce with a can of stewed tomatoes, soy beef crumbles, vegetable broth, olive oil, and fresh garlic.  Once the veggies and sauce were all finished simmering together we poured the mixture over wheat pasta and sprinkled fresh basil from the new window plant on top.  Don cooked up some simple garlic bread with the remainder of a loaf of Le Panier bread I had picked up before the trip.  The meal took almost no time to prepare and it really hit the spot for fresh Italian after out weekend of eating out for every meal.
