Belmont Cookies (v) (gf) (nf)



Dry
1 tsp baking powder
1 tsp baking soda
1/4 cup tapioca flour
1/2 cup amaranth flour
1/2 cup coconut flour
1 cup brown rice flour
1 tsp xanthan gum
1 tsp salt

Wet
1 flax egg (1 tbsp ground flax seeds mixed with 3 tbsp water soaked at least 5 minutes)
3/4 cup coconut sugar
1/4 cup raspadura sugar
1/2 cup pure maple syrup
1 cup melted coconut oil
2 tsp vanilla extract

1 dark chocolate bar (70% cocoa or more) chopped
Salt to sprinkle on top (I used a vanilla salt and I highly recommend giving that a try if you can find it)

Preheat oven to 350. Prepare flax egg. Combine dry ingredients in a medium bowl with a whisk. Combine wet ingredients in a large bowl with whisk. Add wet ingredients to dry ingredient and stir until just combined. Fold in chocolate. Line a cookie sheet with parchment paper and scoop the dough onto the parchment paper in about the size of a golf ball. Press down a bit and sprinkle with some salt. Bake for 11-14 min depending on how well you like your cookies done.

Hanna Nicole and Kallen Lynch | Edison, WA


I found these two during a day trip up to Edison, WA. Both were visiting the area from Port Townsend where Hanna teaches Qigong and Kallen owns Dalla Notte bakery.  They also told me about the Port Townsend Wearable Art Show held every year in their town. Sounds amazing!

And a reminder that this week is Skagit Fashion Week.

Kyoko Kurosu, Hatsumi Yoshida and Yumiko Asuwa | KOBO


I met these ladies while picking up flowers at Marigold and Mint at Melrose Market. They were visiting Seattle from Japan for a trunk show to showcase Hatsumi Yoshida's (Center) designs at KOBO in the International District. All three are wearing her designs.  Hatsumi is currently working with artisans in Bali to create work to develop their skills in creating a line of indigo wearables. Super cool.  Here is a blog post from KOBO about the trunk show that they held. You can still see her work there.

PS. I highly recommend going to either of the KOBO locations. I love the one near my place on Capitol Hill. I can always find the perfect gift there.

Tanja Baumann | Skagit Fashion Week


La Conner, WA

Tanja is doing public relations currently for MoNA, specifically the Skagit Fashion Week that they have coming up next week. From March 10th-14th there will be several fashion and arts related events going on at the Museum in La Conner and Mt. Vernon, in partnership with The Friendship House to raise money for the community. Such a great cause. I'm excited to check it out.
