When I saw this recipe for Saffronog French Toast posted on vegan baking blog Oh, Ladycakes I immediately started soaking the almonds and cashews. I had been wanting to find a recipe for vegan nog this holiday season and it was like Ashlae received some sort of telepathic message from me because this recipe is spot-on exactly what I was looking for. It has an almond milk base, cashews for creaminess, only dates are used for sweetening and best of all it's boozy! I used bourbon but the recipe calls for your choice of dark liquor. It was really hard to leave the saffronog alone last night so that I could use it for the french toast this morning. It is ridiculously good.
This morning I got everything out, sliced up my bread and dunked all the slices into the nog. I let them all sit on a cookie sheet for about 15 min to really let the liquid soak in. Once thoroughly soaked in bourbony goodness I put a hefty nob of coconut oil into a skillet and fried those slices up. Don and I both channeled our inner Buddy The Elf and doused the french toast in pure maple syrup. We ate every last piece...
This may be my favorite Oh, Ladycakes recipe. I can't believe it's possible to make egg nog and french toast vegan. What's going on here??
