Well, it's official... I experienced the best vegan baked goods I have ever tasted while visiting Portland last week. While wandering the Alberta Arts District I happened upon Back To Eden Bakery Boutique. Halfway through reading the writing on their window I was on my way inside and very excited.
Even the shelves of candy bars that you see in this picture are vegan.

From the second I walked in and saw the cases of goodies I knew I would be making some very hard decisions. Cakes, dessert bars, cookies, cupcakes, pies, truffles, and soft serve caught my attention in all directions.
I finally settled on the Everything Cookie, Pumpkin Whoopie Pie, and a Hazelnut Chocolate Bar. There was a lot of "wow", "oh my gosh", and "seriously?" with just about every bite that Don and I took of all three. I am still in complete awe that the cream in the Whoopie Pie was vegan... incredible!
It has already been decided that Back to Eden will be a regular stop on all my future trips down to Oregon. There is still so much left that I need to try. Portland's newest vegan bakery did not disappoint. If you are in the area don't miss it.
